Honey
Alongside the ceramics studio at Zelmeņi, 250 bee colonies are at work. The honey is made the same way as the ceramics — by hand, without hurry, with precision.
Blossom honeys
- Summer blossom honey — the classic Latvian honey, gathered across the summer bloom. Light, balanced, good in everything.
- Buckwheat blossom honey — dark and strong, with a deep, malty character. A honey people either love or remember.
- Heather blossom honey — late-summer honey from the heather fields. Dense, aromatic, among the most prized Latvian honeys.
- Forest blossom honey — gathered from wild forest bloom. Darker and richer than meadow honey, with the taste of the woods it came from.
Creamed honeys with Latvian berries
Raw honey whipped to a soft cream and blended with Latvian berries and fruit — nothing else added:
- Blackcurrant
- Cranberry
- Lingonberry
- Raspberry
- Sea buckthorn
- Rowan
- Quince
From the hive
Beyond the honey itself, the hives give more:
- Propolis honey — honey blended with propolis, the resin bees use to seal and protect the hive. Darker, with a distinct herbal edge.
- Bee bread — pollen packed into the comb and naturally fermented by the bees. Dense and tangy, eaten by the spoonful.
- Bee bread with honey — the same bee bread preserved in honey. Milder, made for daily use.
- Bee pollen — fresh pollen granules, collected as the bees return to the hive.
How the honey is made
Each variety depends on what is in bloom — the bees work where the flowers are. The honey is extracted, strained and jarred on site at Zelmeņi, with no industrial processing and no additives. What the bees gathered is what goes in the jar — nothing else.

Buy honey in the shop — shipped alongside the ceramics and beeswax candles. Zelmeņi honey is also carried by major Latvian retailers, and sold in person at Zelmeņi.
